Few things are more delightful than sharing cheese with friends, except maybe pairing cheese and beer with friends. And not just any beer. Wild’n crazy beer! You’re looking at Tuesday night, when I rolled into Mission Dolores, home to my old pal Scott Stubbs, to teach a Cheese and Beer 101 class.

The S.S. Tubbs had picked up five cheeses from Stinky Brooklyn. All we had to do was pull bezzie mates from the taps. What a treat to find some unusual pairings that really worked, including a smoked sour! Here’s a recap of the evening’s menu. If you attended, thanks bunches! If you were home watching “Orange is the New Black,” well, you’ll have to try these honeys yourself.

Sheep’s Milk Ricotta + Great Divide Pilsner

Humboldt Fog + Ommegang Witte

Cabot Clothbound Cheddar + Carton Brewing 007XX Double IPA

Hudson Red + Freigeist Peated Abraxxxas

Roomano + To Øl/Omnipollo Brewmance

Favorite Combinations: Carton Brewing’s 007XX reminded me of chutney in a glass — it was all winter spices and zesty fruit peel, a great match for Cabot Clothbound. Freigeist Peated Abraxxas, a smoky sour, was strangely delicious with stinky Hudson Red; the beer’s honeyed tones rounded out this barnyardy bad guy, and the thin veil of smoke brought out tastes of spit-roasted meat.

    Great class! Loved the Roomano cheese. Working on a Swiss style beer and cheese pairing for the fall. Would love your thoughts!

      Allison, try a bock beer or Oktoberfest beer. They work well with “Mountain Men,” as I like to call them in the book — Emmentaler, Gruyere, Appenzeller.

  2. Nice pairing list. I had never heard of Mission Dolores, but I’ll be in Brooklyn in a few weeks, so I’ll check them out.
    Humboldt Fog is one of the greatest beer cheeses ever. Period. I never would have thought, until I tried it with all different styles (including stouts). Just awesome.
